I got to know Dumarest... How is it that you eat so good? Sea Bass? I have things like that maybe once a month. You seem to have nice meals once or twice a week.

Though I did have a nice Angus steak last night medium well that was delicious.

I didn't know my eating habits were unusual. Let's see: I live in a seaport so I can get lots of fish either local or imported, there's also lots of agriculture nearby so I can get fresh fruits and vegetables, there are farmer's markets and roadside Mexican fruitstands, bodegas, carnicerías...plus I work from home so I can prepare and cook whatever I want to eat without worrying about whether it will fit into my lunch hour, and there's no one to tell me I can't have a beer or a glass of wine with it, either. I had calamari for lunch the other day and a homemade turkey cheeseburger with avocado and pickles the day before that. What do you guys usually eat?

My wife cooks two or three times a week and on days that she doesn’t cook we either eat leftovers or go to a restaurant (at least we did before Corona). We have baked Salmon probably once a week for supper and smoked salmon two or three times a week for lunch. We usually have steak once a week or so and the rest of the days will be something like Chicken Picatta or something simple like Spaghetti. We also eat Greek, Mexican and Russian food once or twice a month.

I'm in central Texas. Fish is kinda expensive, except stuff like tilapia. Chicken, pork, and beef are a lot more common.

I splurge on some decent salmon now and again. Things like sea bass, good tuna, and swordfish are usually $20-30 a pound.

Yeah I have had Sea Bass maybe three times in my life. Same goes for Swordfish. Fresh seafood is trucked into Dallas every morning from Galveston but its pricey and the selection is limited to whats common in the Gulf. We make an exception for Salmon though. Not cheap but we love it!

Sometimes salmon (and trout, I forgot to mention trout) is cheap. Depends on the week. H-E-B sometimes puts it on sale for $6-10 a pound. That's usually when I jump on it.

Since I had today off, decided to tweak a recipe I recently ran across.

Bacon and mushroom lasagna in a pan. Giving it time to cool and set, then will have it with some beer bread I did on Friday.

Forgot to start the potatoes and then it was too late to bother. I also had to use a lemon instead of a lime for the Corona.

Lunch!
Sandwiches.jpg
My Father and I made some bread for my birthday on Friday. Because the loafs were smaller than bread I normally use, I made 2 smaller sandwiches instead of 1 normal sized sandwich.

First I cooked a half a slice of bacon and a handful of small die onions.
After the Bacon and onions were done I mayonnaised up 4 slices of my homemade bread and sprinkled Paprika and Black Pepper on them, along with a bit of honey mustard on the top slices.
Then I added a slice of mild cheddar cheese to each sandwich, followed by a couple pieces of romaine lettuce and a slice of tomato.
On top of the tomato I put some chopped up Dilly Beans I got for my birthday.
Finally to top it all off I added the bacon and onions.

I have about 20 minutes to decide what to drink with shrimp and potatoes both seasoned à la Dumarest.

I feel déjà vu...

If you replace the Mexican food stalls with various Asian foodstalls, then it sounds pretty much like where I live in Brisbane

a New Mexico dish, tamale casserole. Cornmeal, onion, red or green chile, ground beef or ground pork or a mix of both, and cheese. Along with my variation of Spanish; spices, tomato, chipotle peppers, and sweet corn.

Lunch = a barramundi filet seasoned with garlic and teriyaki and baby Dutch yellow potatoes seasoned with garlic, parsley, and paprika, plus a glass of Australian Shiraz.

Years ago, my mother in law gave us a small George Foreman grill. We still use it occasionally, but only as a sandwich press. I can get an assembly line going where one sandwich cooks while I fix the next one. Today, we had hot ham and Swiss sandwiched with mustard and pickles and hot mustard on rye with sides of pickled beets and the last of the scalloped potatoes.

You often see them at places like Goodwill for a couple of bucks. Worth considering if you have the storage space in your kitchen.

This is one of the most-used items in my kitchen. Sandwiches, burger patties, rissoles, skewers, sliced potatoes. It's pretty versatile.

Dinner = Black Forest ham, turkey, Genoa salami, red leaf lettuce, Swiss cheese, tomato, and yellow onion on a lightly toasted bagel. I'll probably eat again after the kids go to bed as this is kind of early for dinner.

Brunch = beer-battered cod with lemon, baby Dutch yellow potatoes seasoned with garlic, paprika, and parsley, smoked Gouda, and a bottle of Stella Artois! When you get the fish, potato, and cheese all in one bite it is amazing.

Needed to finally restock the pantry so for the next couple of weeks it will be smoked salmon, beer battered fish and chips, spicy crispy chicken breasts, Hatch green chili cheeseburgers, breakfast burritos with extra hot red chili sauce, along with an assortment of grilled veggies and side dishes. There might be a key lime pie or two in there as well...

I've had occasion to go downtown four times in the past week. It's depressing how many businesses don't exist only a couple months into this shutdown. I got us takeout from Lido's for dinner and left a good tip just to do what little I can to keep them afloat. I hope they don't go under as well.
