In order to make the perfect meat sauce, we must start with the perfect meat:
Spam. Three cans, run through the cheese grater. This is even more fun than it sounds.
Two cans of diced tomatoes and green chilies, a heaping tablespoon of minced garlic, and a generous splash of red wine vinegar and olive oil.
Delicious pink hot dogs. You can't really tell just how pink they are...
... until you cut them open for contrast.
My secret ingredient.
Et voila! We have our finished product.
During the mid-preparation tasting... I wasn't sure the spam was working at all, but the finished product was indeed tasty-- it turns out my daughter has developed an aversion to spicy foods, and one of my kinswomen is on a strict diet... but Ravyn's mother and my brother said it was delicious and I concur. (My brother did report that he wished it were spicier and less sweet.) My brother's wife wasn't hungry... so I'll have to find out later what she thought of the vegan version of this recipe. Not really my best effort, but it is generally improving with every attempt.
